We've long been huge fans of Naperville brewery Solemn Oath and we finally booked a date for a beer dinner, Thursday March 19 at 7pm.

The 4-course dinner will be served in the Trenchermen bar, paired alongside some of Solemn Oath's more select brews.

The Beer:

Welcome Beer - Kidnapped By Vikings

First Course - Punk Rock for Rich Kids

Second Course - Coffee Kavorka

Main Course - Mean Ol' Grumpess

Dessert - Telegraph

Second Course - Toasted Oats, Fermented Black Bean, Chicken Liver Braunschweiger

Drinking Up the Flag Beer Dinner

On Wednesday, March 4 Trenchermen is proud to host historian Liz Garibay to celebrate Chicago's 178th birthday! We are the culminating event in the five week Chicago Flag series.  Liz and illustrator Phil Thompson of Capehorn Illustration collaborated on the series to honor the city's eating and drinking history through the iconic city symbol.


Chef Patrick Sheerin will prepare a Five Course dinner inspired by the five main elements of the Chicago Flag: Each of the four stars and the Blue and White stripes. Each course will be paired with a beverage that also represents the flag and has been a part of the story series.

You can expect pairings from local breweries and distilleries, including Metropolitan Brewing, Penrose Brewing, Koval Distillery, Three Floyds Brewing, Local Option Bierwerker and Pipeworks Brewing.

Star 1: Fort Dearborn- Maize, Beans & Squash, Cornmeal Gnudi, Whiskey Glazed Squash

Pairing: Penrose Brewing P2 poured from a Firkin (pale ale)

Star 2: The Great Chicago Fire - Smoked Duck Liver Terrine, Grilled Duck Hearts, Beer Vinegar Pickled Charred Turnips

Pairing: Local Option Bierwerker die konigin

Star 3: 1893 World's Fair - Shrimp DeJonghe, Puffed DeCecco Pasta, Oyster Butter

Pairing: Metropolitan Brewing Heliostat (unfiltered zwickel)

Star 4: 1933 World's Fair & Post Prohibition - Corned Wagyu Beef Brisket, Sauerkraut, Rye, Mustard

Pairing: Three Floyds Brewing jinx proof (dortmunder lager)

The Flag: Chicago - "Brownies" & "Cheesecake"

pairing: pipeworks nagami equinox (Belgian golden strong with kumquats)

Trenchermen is honored to be the first to welcome Scribe Winery and winemakers Adam and Andrew Mariani to Chicago with a special 5 course dinner on Thursday, February 19 at 7pm.

Scribe Winery has been turning heads in the wine and food world since opening in 2009. Winemakers Adam and Andrew Mariani are 4th generation farmers leading a new generation of young American winemakers. Scribe prides itself on producing wines that express an unmistakable sense of place unique to Northern California.
