Our pals at Rabbit Hole Magazine recently paid us a visit to check out Jonah's debut cocktail menu, and too a shining to his Martinez-riff, The Martinsson.
When Jonah Frank took over the bar at Trenchermen this year, he was no stranger to the Wicker Park favorite. After years of working with their team, he was more than ready to redefine their cocktail list in a way that their regulars would love, and new visitors could discover.
The Martinsson was the first clear cocktail he added to the list, riffing on a Martinez , originally made with Old Tom gin, vermouth and bitters. Frank omitted the sweeter gin and removed the floral notes, while adding flavors like caraway, fennel and dill with the Aquavit. Frank opts for a cleaner white vermouth instead of its sweeter cousin. As he puts it,”It’s relatively elegant, given a guy who looks like me made it.”
