No two beer dinners are alike, especially when Pipeworks Brewing Company is involved. The Chicago microbrewery was started by Beejay Oslon and Gerrit Lewis in 2012 with a very clear idea as to how they would stand apart from their competitors: never brew the same beer twice. It’s a concept known as gypsy brewing, though that usually involves brewing on borrowed equipment. But Pipeworks knew they could sustain a life of “one off beers” with their own brewery, and they have: In January, 2013, Pipeworks was awarded with RateBeer's 'Best New Brewery' distinction. Needless to say, Pipeworks quickly earned somewhat of a cult status among beer enthusiasts, and their offerings sell out regularly — and with haste.
So, while you’ve got to be on your toes to catch one of the brewery’s public offerings, you’ve got to be on super high alert to catch one of its special collaborative brews. Lucky for you, we’ve got an excellent opportunity to earn some beer geek-bragging rights: On Sunday, March 30th, the playful food of Trenchermen’s Chef Pat Sheerin will join forces with Pipeworks’ insanely creative brews — including an exclusive, collaborative keg!

Smoked salmon, pretzel bread, mustard cream cheese
Wagyu tartare, sesame, black bean and orange
Radishes, goat’s milk butter and nori sea salt
I. White anchovies, celery, celery root, kumquats, pumpernickel / Nagami Equinox - A collaboration between Pipeworks and Trenchermen! A dry, effervescent Belgian Golden Ale brewed with 100 pounds of kumquats and Mandarina Bavaria hops. Bright notes of fresh citrus, tangerines, white flowers and, of course, kumquats.
II. Miso roasted carrot, spruce egg yolk jam, crispy chicken skin, cashews, grapefruit confit / Pipeworks Down Unda - Imperial IPA brewed exclusively with hops grown in the southern hemisphere including Waimea, Wakatu and Australian Summer. Citrus notes of grapefruit, orange and lime are accompanied by dank, resinous pine aromas.
III. Corned beef shank, potato, pastrami puree, spring pickles, chayote / Pastrami On Rye - A dark smoked rye beer brewed with all of the spices used in curing pastrami; mustard seed, bay leaf, red pepper, coriander, ginger, allspice, clove, caraway seed, Tellicherry black peppercorn, cinnamon & nutmeg
IV. Trenchermen S’mores, dark chocolate, popcorn ice cream, house graham, smoked mallow / Gerrit’s Weirdo Smoked Stout - Imperial smoked stout mashed in with 25 pounds of pretzel rods and brewed with cacao nibs. Rich, slightly smoky, chocolate and a slight salinity.
It all starts at 6:00pm, with passed appetizers and a beer cocktail, followed by four courses of all-new Pipeworks releases expertly paired with Trenchermen fare.
