Each month we work with a different coffee roaster to make sure that the first coffee of your weekend brunch is the best coffee you’ve had all week. In fact, we go to great lengths to choose a bean to be served exclusively at brunch, where we brew the coffee two ways: with a v60 pour-over — a slow and precise method of brewing that extracts the flavors and aromas of the beans like no other — and a Yama Cold Brew Drip Tower.
Then, we have the kitchen invent a delicious pastry that perfectly suits the brew, and even the bar offers an homage: a coffee cocktail with that month’s bean as base spirit. To top it all off, we gave this elaborate tribute to one lil’ ol’ bean a long, fancy name: Trenchermen Roaster’s Series! It’s a surround-sound coffee experience that’s impossible to find at any other brunch in town.
All throughout November, we’re serving up cup after cup of Metropolis Coffee Company in our ongoing Roasters Series. Another Chicago coffee scene mainstay, Metropolis Coffee Company has been leading the industry for years and they've been heaped with countless accolades. Food & Wine named them one of the “Top American Coffee Bars” way back in 2006 and they were recently recognized by the 2014 Good Food Awards for their work in the coffee industry; a host of other honors are sandwiched in between.
We knew we had to feature their beautiful brew for the same reason their product earns so much recognition: a deeply passionate commitment to the coffee community. Metropolis Coffee Company acknowledges the way the art of coffee spans the entire continuum: from the coffee farmer to the customer. Their role in the roasting and preparation process is approached as a way to honor each step of that journey. And this feels very much like the way we view our role in preparing and presenting your meal during your Trenchermen experience.
