Each month we work with a different coffee roaster to make sure that the first coffee of your weekend brunch is the best coffee you’ve had all week. In fact, we go to great lengths to choose a bean to be served exclusively at brunch, where we brew the coffee two ways: with a v60 pour-over — a slow and precise method of brewing that extracts the flavors and aromas of the beans like no other — and a Yama Cold Brew Drip Tower.
Then, we have the kitchen invent a delicious pastry that perfectly suits the brew, and even the bar offers an homage: a coffee cocktail with that month’s bean as base spirit. To top it all off, we gave this elaborate tribute to one lil’ ol’ bean a long, fancy name: Trenchermen Roaster’s Series! It’s a surround-sound coffee experience that’s impossible to find at any other brunch in town.
Half Wit Coffee Roasters hold the spotlight as this month’s featured roaster. Though they’ve been supplying wholesale beans all over the place for some time, you’ll most likely recognize this stellar product because of their sister location, The Wormhole. You may have been drawn into this cozy Milwaukee Avenue coffee shop because of the “replica” (we’re 50% certain it’s real) DeLorean time machine that occupied center stage for a number of years.
But you absolutely stayed for the coffee, because it’s a perfect pour each and every time without pretense. It’s the lack of pretension and ease of their roasts which had us clamoring to serve each cup with a simple, seasonal pastry for our pourover pairing. Enter the Black Bottom Muffin with Sweet Potato Cheesecake.
There’s no muffin less pretentious than one of the chocolate variety and when we combined that with the sturdy sweetness of sweet potato cheesecake, it was a pourover pairing match made in heaven. Available now — and through the end of the month — on our brunch menu!
